Dipping Pizza


2 C luke warm water
2T yeast
1T sugar
1t salt
4C flour
Mix water, salt, sugar, yeast, and a little of the flour
When it starts to bubble, you can put in the rest of the flour
Grease a cookie sheet and flour your hands. Push the dough down into the bottom of the cookie sheet (until it's flat and fairly thin). Cover with any toppings you want (no sauce though).
I usually put mozzarella and parmesan cheese with pepperoni. Cook at 350 for 30 minutes maximum. Check at about 20 minutes to see how it's doing. After baked cut and dip into your favorite spaghetti sauce (or ranch dressing).

Artichoke Chicken

This recipe is super easy and super delicious! It is one of our favorites.


1 15 oz. can artichoke hearts (drained & chopped)

¾ cup grated parmesan cheese

2/3 cup mayonnaise

1 pinch garlic pepper or 1 clove minced garlic


Mix artichokes, cheese, mayo, and garlic. Grease baking dish & put frozen chicken on the bottom. Cover with mixture and bake at 375 for 30 minutes (uncovered). Serve with rice.

Out of this World Rolls

These rolls are absolutely to die for. They are very sweet and fluffy, perfect for holiday dinners. Happy baking!


Out of this World Rolls

2 pkgs. dry yeast (fast-acting works also)
1/4 cup warm water
3 eggs, well beaten
4 1/2 cups flour
1 cup warm water
1/2 cup shortening
1/2 cup sugar
2 tsp. salt

1. Soften yeast in 1/4 cup warm water. Let stand 10 minutes.
2. Combine in a large bowl the following ingredients:
dissolved yeast
eggs
2 1/2 cups flour
1 cup warm water
shortening
sugar
salt
3. Beat until smooth
4. Add remaining flour to make a soft dough
5. Cover & let rise until double in bulk
6. Punch down dough & refrigerate overnight
7. 3 hours before baking, roll out as desired. (Take about 1/2 the dough and roll out into a circle. Cut like pizza and roll pieces up fat end to pointed end.)
8. Cover with plastic wrap and let rise for 3 hours (preferably in a warm place).
9. Brush with melted butter
10. Bake at 400 degrees for 12-15 minutes (My oven is very hot so it only took about 5 1/2 minutes to bake them. I would check around 5-6 minutes and see how they're doing.)

Chicken Enchiladas

Chicken Enchiladas


2 cans cream of chicken soup

1 (4 oz) can diced green chilies

16 oz sour cream

3 green onions, chopped

½ lb. Monterey Jack cheese, grated

4 large chicken breasts, cooked, skinned, deboned, and cut up

1 doz. Medium-sized flour tortillas

½ lb. Cheddar cheese, grated


In large bowl, combine soup, chilies, sour cream, onions, and Monterey Jack cheese. Remove about 2+ cups of this mixture and add the cut-up chicken to it. Divide this mixture into the 12 individual tortillas and roll each one tightly. Spray large dripper pan with cooking spray. Place tortillas, seam side down, in pan, separating slightly. Spoon the soup mixture over top of tortillas. Cover with Cheddar cheese. Cover pan tightly with foil. Bake at 350 degrees for 45 minutes or until bubbly. Makes 12 big enchiladas. Serve with your favorite salsa.

Never Fail Choclate Fudge

Boil together:
4 1/2 c sugar
1 tall can evaporated milk
1/3 c butter
Boil 5 minutes only.

Prepare in large bowl:
1# choclate candy bars
40 large marshmellows
1 or 2 pkgs choclate chips
2 c nuts (broken up/ chopped) (optional)

pour boiled mixture over this mixture and mix throughly, until all is melted. Spread in large butter pan. Cool and serve. (makes 5 lbs.)

Twice Baked Potatoes

4 large potatoes
4 tbs butter
3/4 c sour cream
3/4 c salt
1/4 pepper, paprika, and shredded chedder cheese

Scrub potatoes and pat dry. Bake at 400 for about 1 hour or until tender. Cut potatoes in half lengthwise; scoop out and pulp and mash. Beat in butter, sour cream, salt and pepper. Plie potato mixture back into only 6 of the shells. Sprinkle with paprika. Bake at 425 for about 15 minutes or until cheese is melted and potatoes are heated through.

Fudge Bars

1 cup butter
2 cups brown sugar
2 eggs
2 tsp vanilla
2 1/2 cups flour
1tsp baking soda
1 tsp salt
3 cups oatmeal

Filling:
1 (12oz) pkg choclate chips
1 can sweetened condensed milk
1/2 tsp salt
2 tsp vanilla
2tbsp butter

To make the filling, put milk in sauce pan on low heat. Add cholate chips, butter, salt and melt slowly. Then add vanilla. Stir until smooth and set aside. Cream butter, sugar, eggs and vanilla. Add dry indredients. Put 2/3 of dough in bottom of cookie sheet. Pour filling ober and smoothout. Sprinkle the rest of the dough on top. Bake at 350 for 11 to 13 minutes. Hope you like! Enjoy!!

Beefy Skillet Ravioli

Prep: 15 min. Cook: 15 min Serves: 4

1lb. ground beef
1 can spaghetti sauce
1 can diced tomatoes
1pkg refrigerated cheese
2tbs Parmesan cheese
1tbs chopped fresh Italian parsley

Brown: ground beef in large skillet; drain. Stir in spaghetti sauce and tomatoes; blend well. Bring to boil.
Add: Ravioli to skillet; spoon meat sauce over ravioli until well coated. Reduce heat; cover and let simmer, on medium for 15 minutes or until ravioli is tender.

Chicken Divan

Preheat oven to 350

Cook 4 chicken breast
Cook broccoli (as much as you like)

While chicken and broccoli are cooking mix the following in a bowl together:

1 can cream of chicken
4oz evaporated milk
2/3 cup mayo (I put less less mayo and more cream of chicken in)
1/2 cup grated cheese
1tbs lemon juice
1tbs curry powder

Mix all ingredients (listed above) into a bowl. Stir well.

Dice chicken breast and put in a cake pan. Add broccoli over chicken and then add the mixture (above) over chicken and broccoli. Bake at 350 for 30 minutes. Enjoy!!


Serve with rice!

Banana Bread

This is a very sweet banana bread that became an instant favorite. It's great for a dessert or for breakfast!

Banana Bread

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 tsp. vanilla
1 tsp. baking soda
Pinch of salt
1 1/2 cups of flour

Preheat oven to 350 degrees. With a wooden spoon, mix butter and mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last and mix thoroughly. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
